Reports directly to Junior Sous Chef and Executive Chef. Commis is primarily
responsible for preparing meal ingredients for the Chef in Charge and
assisting with various kitchen duties.
The Commis Chef's responsibilities include informing the supervisor of
malfunctioning or broken kitchen equipment, unpacking, and organizing
deliveries.
Is responsible for presenting and communicating transparent inputs that will
represent the vision, values, and full offerings of The Bridge Lifestyle Hub.
This Job Description intends to highlight the most critical areas of
responsibility only and does not cover all aspects of the position.
| KEY RESPONSIBILITIES
| OPERATIONAL EXCELLENCE
* Receives deliveries and verifies that all ordered items have been delivered and are of good quality.
* Complies consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
* Supports Chefs throughout the service to synchronize and develop all dishes.
* Makes sure the menu conforms to customer requests and company policies.
* Ensures that the correct and identical ingredients are used according to chefs' specifications to establish that quality is justified at all times.
* Measures and prepares meal ingredients, which include seasoning of different proteins as well as washing, peeling, and chopping vegetables and fruits.
* Prepares necessary cold items and sauces as directed by the Chef de Partie or Chef In Charge
* Is able to take inventory of restaurant supplies and notifies the supervisor of low or depleted supplies.
* Discards expired and spoiled food items stored in the stock rooms, refrigerators, and freezers.
* Reads, follows, and executes a recipe and replicates a plating of requested meals.
* Assists the PIC to ensure smooth operation.
| ADMINISTRATION
* Complies with completion of Food and Safety as well as Waste and Breakage forms as instructed by the Track Manager.
* Fills daily duties checklists and activity log.
* Supports and participates in audits being conducted by Abu Dhabi Municipality and Health Authority.
| INTERNAL & EXTERNAL CUSTOMER SERVICE
* Supports and promotes all initiatives carried by the Marketing | PR team.
* Provides a clear and concise description of services, products, facilities, and Tracks.
* Performs any reasonable task required that might be outside the job scope in the spirit of collaboration.
| SUSTAINED LEARNING & DEVELOPMENT
* Participates in TB training sessions and communication briefings on a monthly, weekly, and daily basis.
* Completes necessary Food relates training and exams as required by the authorities.
* Shows interest in learning and mastering the recipes and explores new techniques beyond the daily work scope.
* Maximizes opportunities for self-development to upgrade his/her knowledge and skills by actively participating in TB internal and external initiatives and App.
| HYGIENE & SAFETY
* Maintains a high level of personal hygiene, seeks feedback on areas of shortfall, and complies with the Grooming procedures.
* Complies with all Health & Safety regulations while performing daily duties at all times.
* Takes responsibility for reporting any hazard and follows up to ensure the execution of required actions.
* Is aware of allergens used in each recipe and seeks guidance if any clarity is required.
| POSITION REQUIREMENTS
| EDUCATION & EXPERIENCE
Courses in the following integrated modalities will add value to the preferred

* At least a High school diploma or a GED.
* Proven commercial kitchen experience - preferably in the pastry section/bakery.
* Strong knowledge of food health and safety regulations.
* Must understand, communicate in English and carry out instructions in oral or written format.
* Fit to stand for extended periods.
* Must be able to understand recipes, measuring, and basic kitchen techniques.
* Willing to learn new skills.
* Great organizational and communication skills.
* Must be able to relate to all levels of management.
* Resourceful, forward-thinking, innovative, and committed.
* Must be willing to add value to enhance health, safety, and productivity, as well as maintain TB to thrive on being a smoke-free workplace.
* Experienced in being an integral point of contact for esteemed Bridge customers.
