JOB SUMMARY


Kitchen Supervisor


DUTIES & RESPONSIBILITIES



  • Plans and directs the preparation and serving of food in the cafeteria and Patients in coordination with the Catering co. & NMH Dietician.

  • Participates in planning menus, preparing and apportioning foods, and utilizing food surpluses and leftovers .

  • Ensures that the Menu finalized is delivered without deviations and is of the best quality both in flavor and in appearance before it is served.

  • Specifies the number of servings to be made to meet the necessary requirements of the patients & staff.

  • Assumes responsibility of the food and the supplies. Keeps track of the incoming & outgoing supplies/materials and maintains an updated report.

  • Informs the Dietician and/or Catering co. for any faulty or inferior quality food received/ prepared.

  • Supervises the storage and care of food & supplies. Records all food requisitions from the Hospital (meetings, daily meals etc.) and records all meals served.

  • Assigns, directs, plans and supervises the work of kitchen staff. Supervises and instructs in the safe, proper, efficient use of all kitchen equipment and in performing assigned tasks.

  • Trains new workers and ensures that the policies & procedures are followed

  • Keeps staff time records. Develops and adapts work schedule as per prevailing work pressure and occupancy; confers with the Dietician in case of any personnel problems.

  • Reports immediately, to the DASS/ Dietician, any problem or accident occurring in the kitchen or cafeteria premises.

  • Maintains the highest standards of safety and cleanliness in the kitchen. Supervises in the daily cleaning of the kitchen, serving, storage and dining areas, all kitchen equipment, and the washing/sterilizing of all dishes/utensils.

  • Inspects the kitchen, cooking and mixing utensils and employees for cleanliness and hygienic purposes.

  • Inspects and ensures best functioning of all kitchen equipment is as per given manufacturer's instructions

  • Keeps a check on all kitchen equipment ensuring that it is in safe, working condition, and notifies the concerned authority when repair/ replacement is needed.

  • Gathers data, compiles, reviews, and submits essential reports, as directed.

  • Participates in the preparation of food/ snacks menu and its timely delivery for meetings, seminars, and other staff functions.

  • Attends meetings when required.

  • Performs miscellaneous job-related duties as assigned.
