Key Responsibilties:
Preparing outlet and brand wise F &B; cost reports.
Ensuring accurate recipe costing and menu item linking in the system and
reviewed in periodic basis.
Ensuring implementation of GSP through GSP audits.
Ensuring inventory controls by physical inventory verification.
Preparing Cost forecast and budget for the outlets.
Different Cost related anlysis including purchase price analysis to be done
based on the management requirement.
Invenotry Variances Reporting to Opeartion and seeking the reason behind
varinces.
Cost control to follow up for reasons from operations. Any non-cooperation
issues are to be highlighted to Sr. Management.
Cost and margin analysis are Appropriate actions to be taken based on cost and
margin analysis. to be done on periodic basis to figure out items have higher
COGS and measures of controlling the same.
Discontinued menu items & recipes to be deactivated on regular basis.
Cost controllers to do the Yield Test of top selling recipe portions in
comparison to approved recipe for all the outlets on regular basis.
Spoilages and wastages to be reviewed on daily basis. Wastage trending to be
made and reviewed for abnormalities.
Discount trending to be prepared and reviewed for abnormalities.Reasons for
abnormalities to be sought from operations.
Manager complimentary discounts to be reviewed in line with the limits set as
per GSP.Explanations to be sought for complimentary crossing the fixed limits.
Staff meals to be reviewed wile doing cost control audit and explanation to be
sort in case of abnormalities.
Voids trending & checks to be prepared and reviewed on periodic basis for
abnormalities.
All kinds of adjustments to Cross Charge value to be reviewed by Cost
Controllers.
