* versee the training of kitchen personnel in safe operation of all kitchen equipment and utensils. Responsible for training kitchen personnel in cleanliness & sanitation practices, provide training in first aid, lifting and carrying objects and handling hazardous materials. P
* repare the schedule for kitchen staffs and all required paperwork, including forms and reports in an organized and timely manner. E
* nsure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards. Ensure that the kitchen is kept within a safe working environment. C
* ontrol food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures as per agreed targets. Report weekly food cost to the kitchen manager/head chef. O
* versee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis. C
* oordinate & verify any pending equipment work order to maintain repair & maintenance cost. Ensure that all equipment and kitchen areas are kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs. E
