Four Seasons Cairo at Nile Plaza is currently looking for an Executive Chef
BASIC PURPOSE:
The Executive Chef is responsible for the culinary vision, innovation,
recipes, menus, developing local talents and the food safety at the Four
Seasons Hotel Cairo at Nile Plaza
The ideal candidate will:
Be an outstanding and passionate culinarian. This is NOT an administration
job.
Provide effective leadership, mentorship, support and model culinary
excellence to team members.
Focus on quality standards, continual improvement, professional development
and training while developing a culture of exceptional food quality.
The candidate must be able to teach and develop talent at all levels with
patience and care.
Communicate with senior leadership teams and culinary teams
The position will report to the Director of Food & Beverage
ESSENTIAL FUNCTIONS:
Drive culinary vision and establish operational methodology for excellence.
Develop signature and best in class food and concepts
Inspire the culinary team to achieve excellence in culinary preparation and
service to our guests. Cultivate talent and foster continued quality
improvement standards.
Lead innovation of new products and trends.
Main driver of Food Safety and Hygiene Standards
Establish systems and processes to ensure quality assurance and product
acceptability. Provide necessary feedback to stakeholders and monitor
progress.
Provide oversight for development, testing and consistency in recipes, food
quality and production procedures.
Lead the administration of menu management and support the academic and
seasonal menu development for all operations that is nutritious, healthy,
sustainable and financially viable.
Development of culinary standard operating procedures and presentation
standards in partnership with the culinary leadership team of each property.
Analyze production patterns, optimize preparation methodology and create
efficiency model to achieve established departmental and operational food
costs.
May perform other duties as assigned.
KNOWLEDGE AND SKILLS:
Education: Higher degree in culinary arts, or equivalent progressive
experience.
Experience: Minimum five years previous experience as Executive Chef in
leading Luxury Hotels. Experience in large volume and multi concept outlets.
Strong knowledge of French and/or Italian cuisine. Pre Opening and Michelin
Star Experience is a strong plus
Skills and Abilities: Requires outstanding culinary knowledge and skills. In
addition the ability to benchmark standards and quality and develop local
talents.
Requires exceptional leadership skills and creative problem-solving.
Requires highly developed organizational skills and strong and detailed
business acumen for complex culinary operation
