ROLE SUMMARY
The Sushi Maker is responsible for carrying out the production of all menu
items, preparing the required mise-en-place, and ensuring the proper handling
and storage of food.
ROLE PROFILE
* Prepare menu items/substitute items.
* Ensure proper portion, arrangement, and food garnish.
* Maintain food logs.
* Monitor the quality and quantity of food that is prepared.
* Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
* Good knowledge of Allergens in different types of food.
* Prepare a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi).
* Prepare all types of sushi, including maki, nigiri and sashimi Expertly cutting, slicing, and filleting different types of fish.
REQUIREMENTS
* High school diploma or equivalent.
* 2+ years of related culinary experience.
* Experience working with high volume production.
* Highly organized with strong multitasking skills.
* Adapt in a multicultural environment.
* English (Full professional proficiency).
